Description

This classic Pad Thai delivers the perfect balance of sweet, sour, and savory flavors in every bite. Dried rice noodles are softened and then stir-fried with plump shrimp, scrambled eggs, and crisp bean sprouts. The dish is coated in a rich sauce made from fish sauce, sugar, and lime juice, then topped with crunchy roasted peanuts and fresh coriander. It is a vibrant, satisfying meal that comes together quickly, making it ideal for busy weeknight dinners or when you crave authentic Thai flavors at home. Serve immediately for the best texture and freshness.

Ingredients

Directions

  1. In a large bowl, soak the dried flat rice noodles in warm water to cover for 30 to 35 minutes, or until softened but still firm. Drain well in a colander and set aside.
  2. In a small bowl, combine the fish sauce, rice vinegar, sugar, and paprika. Set the sauce aside.
  3. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  4. Add the garlic and green onions to the hot oil. Stir-fry for 1 minute until fragrant.
  5. Add the shrimp to the skillet. Cook, stirring constantly, for 3 to 4 minutes, or until the shrimp are pink and cooked through.
  6. Using a slotted spoon, remove the shrimp and onion mixture from the skillet. Place them in the colander with the drained noodles.
  7. Add the beaten eggs to the skillet. Cook, breaking them into small pieces with a spatula, until just set but still moist.
  8. Reduce the heat to low. Add the noodles and the shrimp mixture back into the skillet. Toss gently to combine with the eggs.
  9. Pour the fish sauce mixture over the noodles. Toss and cook for 3 to 4 minutes, or until most of the liquid has evaporated and the noodles are coated.
  10. Add the fresh bean sprouts and lime juice. Toss gently until completely combined and the sprouts are slightly wilted.
  11. Transfer the Pad Thai to a serving platter or divide among individual plates.
  12. Garnish with chopped roasted peanuts, coriander sprigs, and lime wedges. Serve immediately.
