Pad Thai Part I
Description
This authentic Pad Thai brings the vibrant flavors of a street-side stall to your kitchen. The dish balances sweet, sour, salty, and umami notes through a rich sauce made with fish sauce, tamarind, and sugar. Silk-like rice noodles soak up the flavors while staying tender. Crisp bean sprouts, crunchy peanuts, and fresh lime add essential texture and brightness. It is a satisfying weeknight dinner that comes together quickly with a little prep. Perfect for families or meal prep, this vegan-friendly version (when omitting egg/shrimp) offers a delicious, comforting experience that rivals your favorite Thai restaurant.Directions
-
Soak dried rice noodles in warm water until softened but still firm, about 15-20 minutes. Drain and set aside.
-
In a small bowl, mix fish sauce, sugar, vinegar, and paprika to create the sauce. Set aside.
-
Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add protein (shrimp, chicken, or pork) and stir-fry until cooked through. Remove from wok and set aside.
-
Add another tablespoon of oil to the wok. Scramble the eggs until just set, then break into small curds. Remove and set aside with the protein.
-
Add remaining oil to the wok. Stir-fry garlic and green onions for 30 seconds until fragrant.
-
Add soaked noodles and the sauce mixture to the wok. Toss continuously for 1-2 minutes until noodles are coated and heated through.
-
Return the protein and eggs to the wok. Toss to combine everything evenly.
-
Add bean sprouts and ground chiles. Toss briefly just until sprouts are slightly wilted but still crunchy.
-
Serve immediately topped with ground peanuts and lime wedges on the side.
