  1. Trim the tops and bottoms off the beets, leaving the skin on. Place beets in a Dutch oven and cover with water. Bring to a boil, then cover, reduce heat, and simmer for 35 minutes or until crisp-tender.
  2. Drain the beets and rinse under cold water. Let them cool until handleable, then rub off the skins and cut the beets into wedges. Set aside.
  3. Place walnuts in a large nonstick skillet over medium-high heat. Toast for about 4 minutes, stirring frequently, until fragrant and lightly browned. Remove from skillet and set aside.
  4. Coat the same skillet with cooking spray and place over medium heat until hot. Add the coarsely chopped Vidalia onion and sauté for 3 minutes or until tender.
