Ingredients

Directions

  1. Combine water and 1/4 cup sugar in a medium saucepan. Bring to a boil, stirring constantly until the sugar dissolves. Reduce heat and simmer for 12 minutes to create the sugar syrup.
  2. In a heavy saucepan, combine 1 tablespoon sugar, half-and-half, and orange zest. Bring to a boil, then reduce heat and simmer until the sauce is reduced by one-third, about 30 minutes. Remove from heat and let cool completely.
  3. In a bowl, mix together the flour and crumbled paneer. Knead until the mixture is fluffy and thoroughly combined.
  4. Form the paneer mixture into walnut-size balls and flatten them into 1/4-inch thick patties.
  5. Working in batches, poach the patties in the simmering sugar syrup until they are firm, about 1 to 2 minutes. Turn gently and cook for 1 minute longer.
  6. Using a slotted spoon, transfer the cooked patties to a serving bowl.
  7. Pour the cooled cream sauce and the remaining sugar syrup over the patties. Cover and refrigerate for 6 to 8 hours, or until well chilled.
  8. Just before serving, sprinkle with chopped pistachios and decorate with gold leaf if desired.
