Description

This Pasta Frittata is the ultimate solution for using up leftover spaghetti while creating a delicious, protein-packed meal. Unlike a traditional omelet, this Italian-style dish incorporates the pasta directly into the egg mixture, creating a cohesive and satisfying texture. Layers of fresh diced Roma tomatoes, creamy mozzarella, and salty prosciutto provide bursts of flavor in every bite. Its versatile enough for a quick weeknight dinner, a casual brunch, or a light lunch. The frittata holds up well at room temperature, making it perfect for picnics or meal prep. Simple, rustic, and incredibly comforting, this dish transforms humble ingredients into a restaurant-quality experience.

Ingredients

Directions

  1. In a large mixing bowl, beat the eggs until well combined.
  2. Mix in the cut spaghetti, black pepper, and grated Parmesan cheese.
  3. In a medium non-stick skillet, heat the olive oil over medium heat.
  4. Add half of the pasta-egg mixture to the skillet, spreading it out evenly to the edges to form a round shape.
  5. Spread the diced mozzarella cheese in a single layer over the pasta mixture.
  6. Layer the diced tomatoes, chopped green onions, and sliced prosciutto over the cheese.
  7. Spread the remaining pasta-egg mixture on top, covering the fillings completely.
  8. Cook on low heat until the bottom is browned and crisp, and the bottom layer has set, about 5 minutes.
  9. Flip the frittata over using a large spatula or by sliding it onto a plate and inverting it back into the pan.
  10. Cook uncovered for another 5 minutes, or until the second side is crisp and golden brown.
  11. Slide the frittata out of the pan onto a serving plate.
  12. Cut into 4 wedges and sprinkle with chopped parsley before serving.
