Ingredients

Directions

  1. Cook bacon in a large skillet over medium heat until half crispy, about 5-7 minutes.
  2. Remove bacon from pan and set aside on a paper towel; drain excess fat, leaving about 1 tablespoon in the pan.
  3. Add heavy cream to the bacon fat and cook over medium-high heat, stirring occasionally, until reduced by half, about 3-4 minutes.
  4. Stir cooked bacon back into the cream sauce and remove from heat; set aside.
  5. In a separate frying pan, heat olive oil over medium-high heat until shimmering.
  6. Add shrimp with shells and cook until shells turn pink and shrimp just begin to lose transparency, about 1-2 minutes per side.
  7. Remove shrimp from pan and set aside on a plate to cool slightly.
  8. Peel off shrimp shells and discard.
  9. Place peeled shrimp back into the same pan and add white wine.
  10. Simmer over low heat until liquid reduces to about 1/4 cup, about 2-3 minutes.
  11. Stir the reserved cream sauce into the shrimp and wine mixture; keep warm on low heat.
  12. Meanwhile, peel tough outer layer from asparagus stalks and cut into 1/2 inch pieces.
  13. Steam or blanch asparagus pieces until tender-crisp, about 2-3 minutes.
  14. Drain asparagus and rinse briefly with very cold water to stop cooking; pat dry with a towel.
  15. Bring a large pot of salted water to a boil; add linguini and a dash of oil.
  16. Cook pasta until al dente according to package directions, about 8-10 minutes.
  17. Drain pasta and toss with a little butter to prevent sticking.
  18. Reheat the shrimp and cream sauce mixture gently over low heat.
  19. Add blanched asparagus to the sauce and stir to combine.
  20. Season sauce with salt and pepper to taste.
  21. Add cooked linguini to the sauce and toss thoroughly until evenly coated.
  22. Sprinkle with fresh chives and serve immediately with warm crusty bread.
