Description

This vibrant pasta dish transforms simple ingredients into a restaurant-quality meal. The heart of the recipe is a rich, silky sauce made from halved cherry tomatoes, sweet balsamic vinegar, and umami-rich miso paste. By blending the cooked vegetables with a touch of cornstarch, you achieve a luxurious texture that clings beautifully to the vegetable spiral pasta. The fresh parsley adds a bright, herbal finish that cuts through the sweetness of the tomatoes. Perfect for a quick weeknight dinner or a light lunch, this recipe is entirely plant-based yet deeply satisfying.

Ingredients

Directions

  1. Bring a large pot of salted water to a boil. Add the vegetable spiral pasta and cook for 8 to 10 minutes, or until al dente.
  2. Drain the pasta and rinse briefly with cold water to stop the cooking process. Set aside.
  3. While the pasta cooks, place a large skillet over medium heat. Add 2 teaspoons of balsamic vinegar and 2 teaspoons of water.
  4. Add the thinly sliced onions and minced garlic to the skillet. Sauté, stirring frequently, until the onions are soft and translucent.
  5. In a small bowl, dissolve the tomato paste in 1 cup of water. Stir this mixture into the skillet with the onions and garlic.
  6. Add the halved cherry tomatoes to the skillet. Cook, stirring occasionally, until the vegetables are very soft and the tomatoes have broken down.
  7. In a separate small bowl, dissolve the cornstarch in 2 tablespoons of cold water to create a slurry.
  8. Transfer the cooked vegetable mixture to a blender. Add the miso paste and the cornstarch slurry.
  9. Blend on high speed until the sauce is completely smooth and pureed.
  10. Pour the pureed sauce back into the skillet. Place over medium-low heat.
  11. Stir in the remaining 3 tablespoons of balsamic vinegar and the chopped fresh parsley. Heat through for 2-3 minutes until the sauce is warm and slightly thickened.
  12. Toss the cooked pasta with the warm cherry tomato sauce until evenly coated. Serve immediately.
