Ingredients

Directions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and set aside.
  2. In a large saucepan or Dutch oven, heat olive oil over medium-high heat.
  3. Add diced onions and minced garlic. Sauté until onions are soft and translucent, about 5 minutes.
  4. Add thinly sliced green bell pepper and cook for another 2-3 minutes, until just starting to soften but still retaining some crunch.
  5. Pour in the dry red wine and scrape up any browned bits from the bottom of the pan.
  6. Stir in the canned tomato puree, dried oregano, dried thyme, bay leaves, and cayenne pepper.
  7. Bring the sauce to a boil, then reduce heat to low. Cover and simmer gently for 1 to 1.5 hours, stirring occasionally, to develop deep flavors.
  8. Drain and rinse the canned red kidney beans. Add them to the simmering sauce.
  9. Stir in the rice wine vinegar. Season with salt and black pepper to taste.
  10. Continue to simmer uncovered for 10-15 minutes to allow the beans to heat through and absorb the sauce flavors.
  11. Remove bay leaves. Serve the warm Creole sauce over the cooked pasta.
