  1. Cut chicken into individual pieces and season with salt and pepper.
  2. Place chicken in a large saucepan and cover with cold water.
  3. Bring to a boil, then reduce heat.
  4. Add chopped onions, diced celery, grated carrot, thyme (or bay leaf), and salt and pepper to taste.
  5. Cover and simmer for 1 1/2 to 2 hours, or until chicken is tender.
  6. While chicken cooks, peel and grate potatoes over a bowl of cold water.
  7. When chicken is cooked, remove it from the broth and set aside to cool slightly.

  9. Place the squeezed potatoes in a saucepan.
  10. Add enough boiling chicken broth to the potatoes to almost cover them.
