Directions
-
Preheat oven to 350&# 194;°F (175ðC).
-
For the crust, combine 1 cup all-purpose flour, 1/2 cup packed brown sugar, 1/4 teaspoon salt, and 1/2 cup softened butter in a bowl.
-
Mix until combined, then press the mixture firmly into the bottom of a 9x13 inch baking dish.
-
Bake the crust for 15 minutes.
-
While the crust bakes, drain 3 pints of sliced canned peaches, reserving the liquid.
-
Pour the reserved peach liquid into a medium saucepan.
-
Add 1/4 cup cornstarch to the saucepan. If using peaches in heavy syrup, omit additional sugar; otherwise, add sugar to taste.
-
Stir constantly over medium heat until the mixture comes to a boil and thickens, about 2 minutes.
-
Remove from heat and stir in the drained peaches.
-
Pour the peach filling over the partially baked crust.
-
For the topping, mix 1-1/2 cups rolled oats, 1/2 cup packed brown sugar, 1/4 cup flour, and 5 tablespoons butter until crumbly.
-
Sprinkle the oat topping evenly over the peach filling.
-
Return to the oven and bake for 20 to 25 minutes, until bubbly and the topping is lightly golden.

Note
If you used peaches canned in heavy syrup, you do not need to add extra sugar to the filling.
For a slightly different flavor in the crust, substitute 1/4 cup margarine and 1/4 cup cream cheese for part of the butter.
Allow the crisp to cool slightly before serving so the filling sets.
