Description

This elegant Peach Bavarian cream is a delightful summer dessert that balances the natural sweetness of peaches with a light, airy texture. Unlike traditional heavy puddings, this recipe uses whipped egg whites and cream to create a mousse-like consistency that sets gently with gelatin. The vibrant peach puree infuses the mixture with fresh fruit flavor, making it a refreshing end to a meal. It is perfect for entertaining or a special weekend treat, offering a sophisticated yet simple way to enjoy seasonal fruit. Serve chilled in individual glasses or molds for a stunning presentation that feels homemade but tastes refined.

Ingredients

Directions

  1. In a small saucepan, combine 1/4 cup sugar and the gelatin.
  2. Stir in 1/2 cup cold water.
  3. Cook and stir over medium heat until the sugar and gelatin are completely dissolved.
  4. Remove the saucepan from heat and let cool slightly.
  5. In a blender or food processor, place the thawed peach slices and blend until nearly smooth.
  6. Stir the peach puree into the warm gelatin mixture.
  7. Gradually stir the gelatin-peach mixture into the yogurt until well combined.
  8. Refrigerate the mixture for about 40 minutes, stirring occasionally, until it thickens to the consistency of corn syrup.
  9. In a clean mixer bowl, beat the egg whites until soft peaks form.
  10. Gradually add 2 tablespoons sugar to the egg whites, beating until stiff, glossy peaks form.
  11. In a separate bowl, whip the cream until soft peaks form.
  12. When the gelatin mixture has thickened to the consistency of unbeaten egg whites, gently fold in the beaten egg whites.
  13. Gently fold in the whipped cream until just combined.
  14. Chill the mixture for about 20 minutes, or until it mounds when spooned.
  15. Spoon the mixture into 8 dessert dishes or a fluted mold.
  16. Refrigerate for at least 4 hours, or until firm, before serving.

Note

For best results, ensure the gelatin mixture is cooled but not set before adding it to the yogurt. If the mixture is too hot, it may curdle the yogurt.

The egg whites and cream should be folded in gently to maintain the airiness of the dessert. Overmixing can deflate the texture.

This dessert can be made in a single large mold and sliced for serving, or portioned into individual glasses.

If using fresh peaches, peel and slice them before blending. Frozen peaches work well but should be thawed and drained if excess liquid is present.

Store leftovers covered in the refrigerator for up to 3 days.
