Peach Cobbler (Southern Heritage Pies & Pastries)
Description
This classic Southern Peach Cobbler is the ultimate comfort food for summer evenings. Sliced peaches macerate in sugar, releasing their natural juices to create a luscious filling. The batter, made with flour, baking powder, and butter, forms a soft, cake-like topping that bakes to a perfect golden brown. Serve it warm with a generous scoop of vanilla ice cream for a creamy contrast to the warm, spiced fruit.Ingredients
Directions
-
Preheat oven to 375F (190C).
-
In a medium bowl, combine sliced peaches and 1/4 cup sugar. Toss gently to coat and let stand for 10 minutes to release juices.
-
Place butter or margarine in an 8x12-inch baking dish and place in the preheating oven until melted, or melt in the microwave and pour into the dish.
-
In a separate medium bowl, whisk together flour, 1 cup sugar, baking powder, and salt.
-
Add milk to the dry ingredients and stir until just combined into a smooth batter.
-
Pour the batter evenly over the melted butter in the baking dish. Do not stir.
-
Gently spoon the peach mixture and its juices over the batter, distributing evenly without mixing.
-
Bake for 50 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
-
Allow to cool for 5 minutes before serving warm with a scoop of vanilla ice cream.
