Directions

  1. Finely chop 1/2 cup of pecans; reserve the remaining whole pecan halves for garnish.
  2. In a large bowl, combine the chopped pecans, flour, butter, brown sugar, vanilla extract, and baking powder.
  3. Knead the mixture until it forms a cohesive dough.
  4. Preheat the oven to 350&# 194;°F (177ðC).
  5. Place half of the dough between two sheets of waxed paper and roll it out to a thickness of 1/4 inch.
  6. Use a 2-inch flower-shaped cookie cutter to cut the dough into rounds.
  7. Using a pancake turner, transfer the rounds to an ungreased cookie sheet, spacing them 1 inch apart.
  8. Press a reserved whole pecan half into the center of each cookie.
  9. Bake for 10 minutes, or until the edges are lightly browned.
  10. Allow the cookies to cool slightly on the cookie sheet before transferring them to a wire rack to cool completely.

Note

Store the cooled cookies in a tightly covered container to maintain freshness.

If you don't have a flower-shaped cookie cutter, you can use a round cutter or even a knife to cut the dough into squares.

For a richer flavor, consider using real butter instead of margarine.

You can experiment with different nuts, such as walnuts or almonds, if you prefer.

Make sure not to overbake the cookies, as they can become too hard.
