Description

This classic Portuguese-inspired dish features tender sea bream baked in butter and finished with a luxurious Port wine sauce. The fish is seasoned simply with salt and paprika, allowing the delicate flavor of the white fish to shine. The sauce, made by reducing the pan juices with Port wine and enriching them with cream and egg yolks, offers a deep, savory-sweet complexity that coats the fish beautifully. It is an impressive yet manageable meal perfect for date nights or special family dinners. Serve alongside savory rice or steamed vegetables to soak up every drop of the elegant sauce.

Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC).
  2. Pat the fish fillets dry and place them in a covered fireproof baking dish.
  3. Season the fish generously with salt and paprika.
  4. Dot the fish with the butter and cover the dish.
  5. Bake in the preheated oven for 5 minutes.
  6. Remove the dish from the oven, add the Port wine, cover, and return to the oven.
  7. Continue baking for 15 to 20 minutes, or until the fish is opaque and flakes easily with a fork.
  8. Carefully transfer the cooked fish to a warm serving platter and keep covered.
  9. Strain the liquid from the baking dish into a small saucepan, discarding solids.
  10. Bring the liquid to a boil and reduce quickly by half to concentrate the flavors.
  11. Remove the saucepan from heat and let the liquid cool slightly for a few minutes.
  12. Whisk the egg yolks into the warm Port wine reduction until smooth.
  13. Stir in the heavy cream.
  14. Return the saucepan to low heat and warm the sauce gently, stirring constantly. Do not let it boil or simmer, as this will curdle the eggs.
  15. Pour the creamy Port wine sauce over the fish and serve immediately.
