Note

Use very ripe, soft persimmons (such as Fuyu or Hachiya) for the best flavor and smoothest puree. Remove all seeds before pureeing.

Freshly squeezed grapefruit juice provides the best brightness. If using bottled juice, choose 100% pure juice without added sugars.

For a smoother texture, strain the persimmon puree through a fine-mesh sieve to remove any fibrous bits.

If you do not have an ice cream maker, you can freeze the mixture in a shallow metal pan. Stir vigorously every 30 minutes during the first few hours to break up ice crystals, then add the persimmon puree and continue freezing.

Store any leftovers in the freezer for up to 2 weeks. Let sit at room temperature for 5-10 minutes before scooping for easier serving.
