Ingredients

Directions

  1. Prepare the pheasant leg-thigh portions by placing them skin-side down between two sheets of plastic wrap.
  2. Gently flatten the leg-thigh portions using a meat mallet or the side of a cleaver to create an even thickness.
  3. Spread approximately 1/3 cup of the prepared stuffing onto each flattened leg portion.
  4. Fold the meat over the stuffing to form a 1/2-inch border along the two long sides.
  5. Starting from one short end, tightly roll the stuffed meat into a neat cylinder.
  6. Secure each roll with kitchen twine, wrapping it once lengthwise and three times crosswise to keep the shape compact.
  7. Cover the stuffed rolls and refrigerate for at least 30 minutes until firm.
  8. Preheat the oven to 450ðF (230ðC).
  9. Heat the 6 tablespoons of clarified butter in a large oven-proof skillet over medium-high heat.
  10. Season the stuffed leg packages with salt and pepper, then sear in the skillet, shaking occasionally, until golden brown on all sides (about 4 minutes).
  11. Transfer the skillet to the preheated oven and roast for 4 minutes.
  12. Remove the skillet from the oven and return it to the stovetop over medium-high heat.
  13. Add the pheasant breast halves to the skillet skin-side up and sprinkle with salt and pepper.
  14. Sauté the breasts for 2 minutes, shaking the pan occasionally.
  15. Turn the breasts skin-side down, sprinkle with additional salt and pepper, and return the skillet to the oven.
  16. Roast until the meat is tender and cooked through, approximately 7 minutes.
  17. Transfer all meat to a work surface and let rest briefly.
  18. Slice the leg-thigh portions crosswise into 1/2-inch thick medallions.
  19. Thinly slice the breast halves lengthwise on a diagonal.
  20. Mound about 1/2 cup of the prepared champagne cabbage in the center of each of 4 warmed serving plates.
  21. Arrange the leg-thigh slices around the base of the cabbage mound, overlapping slightly.
  22. Fan the breast slices at the top of each plate, overlapping slightly for an elegant presentation.
  23. Spoon some champagne sauce around the meat and cabbage, and serve the remaining sauce on the side.

Note

This recipe requires components prepared in previous steps: Clarified Butter, Pheasant Stock, Stuffing, Champagne Sauce, and Champagne Cabbage. Ensure all components are ready before beginning assembly.

Chilling the stuffed rolls before cooking helps them maintain their shape during searing and roasting. Do not skip this step for best presentation.

Pheasant is a lean game bird and can dry out easily. Monitor cooking times closely to ensure the meat remains tender and juicy.

Use high-quality clarified butter for the best flavor and browning results. Regular butter may burn at the high roasting temperature.
