Simple ingredients create complex flavors, making this a reliable favorite that tastes homemade and fresh every time.

Ingredients

Directions

  1. Place the raw shrimp in a large pot and add enough water to cover them completely.
  2. Add salt, the whole unpeeled onion, and the celery stalks to the pot.
  3. Bring the water to a boil and cook the shrimp for about 2 minutes until just opaque.
  4. Remove the shrimp with a slotted spoon and set aside; reserve the cooking liquid.
  5. Shell and devein the cooked shrimp.
  6. Heat the oil in a large pot or deep skillet over medium heat.
  7. Saut the chopped onion until it becomes light golden and translucent.
  8. Add the shelled shrimp to the pot, turning them 2 or 3 times to coat in the oil and onion mixture.
  9. Add the peeled and strained tomatoes (or the diluted tomato paste) to the pot.
  10. Cook the mixture for about 2 minutes, then remove the shrimp again and set aside to keep warm.
  11. Measure the reserved shrimp cooking liquid, ensuring you have 2 1/2 cups of liquid for each cup of rice (total 6 1/4 cups liquid needed).
  12. Pour the measured liquid into the pot containing the tomato sauce and onion mixture.
  13. Bring the liquid to a boil, then add the raw rice.
  14. Stir frequently for the first few minutes to prevent the rice from sticking to the bottom.
  15. Reduce heat and cook for about 12 to 15 minutes, until the rice is tender but has not absorbed all the liquid.
  16. Stir in two-thirds of the cooked shrimp.
  17. Remove the pot from the heat.
  18. Cover the pot with a clean kitchen towel, then place the lid on top to trap steam.
  19. Let the rice stand for 5 to 10 minutes until all remaining liquid is absorbed.
  20. Spoon the rice into a serving dish, molding it into a pyramid shape.
  21. Garnish the top of the rice mound with the remaining reserved shrimp.
