Description

This Pineapple Lemon Preserve is a delightful fusion of tropical sweetness and bright citrus zest. By combining crushed pineapple, fresh lemon juice, and zested oranges, this recipe creates a complex flavor profile that is both refreshing and indulgent. The addition of maraschino cherries adds a pop of color and a nostalgic sweetness, while the long simmering process allows the flavors to meld into a rich, jam-like consistency. It is an excellent project for preserving the bounty of summer fruits, offering a unique alternative to traditional jams. Serve it on scones, stir it into yogurt, or use it as a glaze for roasted meats. This homemade preserve is a fantastic gift idea or a special treat to brighten up your breakfast table.

Ingredients

Directions

  1. Wash the lemon and oranges thoroughly. Grate the zest from the lemon and oranges, then squeeze the juice from both fruits into a large, heavy-bottomed pot.
  2. Add the crushed pineapple (including its juice), the 1/2 cup of water, and the grated citrus zest to the pot.
  3. Place the pot over medium-high heat and bring the mixture to a rolling boil, stirring occasionally to prevent sticking.
  4. Reduce the heat to medium-low and let the mixture simmer uncovered for 45 minutes, stirring frequently.
  5. Stir in the 6 cups of sugar and continue cooking, stirring constantly, until the sugar is completely dissolved.
  6. Add the drained and cut-up maraschino cherries to the pot.
  7. Continue to cook and stir the mixture for another 30 minutes, or until it thickens enough to coat the back of a spoon (jell consistency).
  8. Ladle the hot preserve into sterilized jars, leaving appropriate headspace. Seal and process according to your jar manufacturer's directions for safe canning.
