Description

This Pineapple Fluff Frosting is a delightful, cloud-like topping that brings a bright tropical twist to any cake. Made by gently heating egg whites and sugar over a double boiler, this Swiss meringue style frosting is stable, glossy, and incredibly light. The addition of crushed pineapple adds a subtle fruity sweetness and a lovely texture. It is perfect for covering layer cakes, especially chocolate or vanilla sponges, and holds up well at room temperature for short periods. Ideal for summer gatherings or special celebrations, this frosting offers a sophisticated yet approachable finish that balances sweetness with a hint of acid.

Ingredients

Directions

  1. Combine 2/3 cup drained crushed pineapple, sugar, egg whites, and light corn syrup in the top of a double boiler.
  2. Beat the mixture thoroughly with a rotary beater or electric mixer until well combined.
  3. Place the double boiler over rapidly boiling water, ensuring the bottom of the bowl does not touch the water.
  4. Beat the mixture constantly for about 7 minutes, or until the frosting becomes thick and stands in soft peaks.
  5. Remove the bowl from the heat and continue beating for approximately 4 minutes, until the frosting is cool and thick enough to spread.
  6. Fold in the remaining 1/2 cup of thoroughly dried crushed pineapple.

Note

Ensure the crushed pineapple is thoroughly dried between paper towels before folding it into the finished frosting to prevent it from deflating or becoming watery.

This recipe makes enough frosting to cover the tops and sides of two 9-inch cake layers.

Use a candy thermometer to ensure the sugar mixture reaches 160&# 194;°F (71ðC) before removing from heat for food safety, as this cooks the egg whites.

Use immediately after preparation for best texture, as meringue frostings can weep if left out too long.
