Description

This authentic Basque dish combines sweet roasted peppers, onions, and tomatoes in a rich, savory stew known as piperada. The mixture is topped with gently scrambled eggs to create a custard-like texture that soaks up the flavorful juices. Served alongside toasted baguette slices topped with melting Idiazabal cheese and slices of cured ham, it offers a perfect balance of smoky, salty, and sweet flavors. This hearty meal is ideal for brunch or a relaxed dinner, bringing the rustic charm of northern Spain to your table with minimal effort and maximum taste.

Ingredients

Directions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Cut the piquillo and anaheim chilies into 2-inch batons, removing seeds. Thinly slice one medium red onion. Chop four plum tomatoes into 1/2-inch dice, keeping seeds and juice. Cut 2 ounces of slab bacon into 1-inch batons.
  3. In a 10-inch oven-safe sauté pan, heat the olive oil over medium-high heat until shimmering but not smoking.
  4. Add the peppers, onion, and bacon to the pan. Cook, stirring occasionally, until the vegetables are very soft and the bacon is browned, about 12 to 14 minutes.
  5. Add the chopped tomatoes and cook for an additional 2 minutes to release their juices.
  6. Beat 6 eggs in a bowl. Pour the beaten eggs evenly over the pepper mixture in the pan. Stir gently only once to distribute the peppers throughout the eggs.
  7. Cook on the stovetop slowly for 2 to 3 minutes until the edges begin to set but the center is still slightly runny.
  8. Place the sauté pan in the preheated oven. Simultaneously, place 4 slices of baguette topped with Idiazabal cheese on a baking sheet and place in the oven as well.
  9. Bake for 2 minutes, or until the eggs are set and the cheese on the bread is melted and bubbly.
  10. Meanwhile, place one slice of Jamon Serrano (or Jambon de Bayonne) on each of four serving plates.
  11. Remove both pans from the oven. Spoon the egg and pepper mixture over the ham on each plate. Serve with the cheesy toast on the side.
