Description

These Piquant Salmon Rolls are a sophisticated yet simple appetizer or light main, perfect for entertaining or a quick lunch. The star is a creamy filling made from softened cream cheese, crunchy walnuts, fresh celery, and a kick of cayenne pepper, balanced by bright lemon juice and aromatic coriander. This mixture is spread onto slices of smoked salmon, which are then rolled tightly into neat cylinders. The rolls are presented on buttered whole-wheat toast rounds topped with a cool slice of cucumber, adding a refreshing crunch and visual contrast. Garnished with fresh dill and chives, these rolls offer a luxurious texture and complex flavor profile that is both comforting and exciting. They are ideal for holiday parties, brunches, or whenever you want to elevate a simple snack into something special.

Ingredients

Directions

  1. In a medium bowl, combine the softened cream cheese, chopped walnuts, chopped celery, and half of the chopped chives.
  2. Add 2 teaspoons of lemon juice, cayenne pepper, ground coriander, and a pinch of fresh ground pepper to the bowl. Mix well until the filling is smooth and evenly seasoned.
  3. Lay out the 8 slices of smoked salmon on a clean work surface. Spread a generous layer of the cream cheese mixture evenly over each slice, leaving a small border at the edges.
  4. Starting from one short end, tightly roll up each salmon slice to form a neat cylinder. Refrigerate the rolls for at least 15 minutes to help them hold their shape.
  5. While the rolls chill, toast the 8 slices of whole-wheat bread lightly. Using a 2.5-inch biscuit cutter or a round glass, cut a round from the center of each toast slice.
  6. Spread each bread round thinly with softened butter. Place one cucumber slice on top of each buttered bread round.
  7. Place one chilled salmon roll on top of the cucumber slice on each bread round.
  8. Drizzle the assembled rolls with the remaining 1 teaspoon of lemon juice. Garnish with the remaining chopped chives and fresh dill sprigs if desired. Serve immediately.

Note

The salmon rolls can be prepared several hours in advance. Cover tightly with plastic wrap and refrigerate until ready to serve.

For best texture, assemble the toast bases and cucumber just before serving to prevent the bread from becoming soggy. Once fully assembled, serve within 30 minutes.

If you prefer a milder flavor, reduce the amount of cayenne pepper or omit it entirely.

You can substitute the whole-wheat bread with rye or pumpernickel for a different flavor profile.
