Directions

  1. Sprinkle yeast and sugar over warm water in a large bowl of a heavy-duty mixer.
  2. Stir to dissolve the yeast and sugar completely.
  3. Add salt, 2 1/2 cups flour, and vegetable oil to the bowl.
  4. Mix until the dough forms a ball and cleans the sides of the bowl, adding more flour 1 tablespoon at a time if necessary, about 5 minutes.
  5. Continue mixing until the dough is smooth and elastic, about 10 minutes.
  6. Cover the dough and let it stand in a warm, draft-free area for 1 hour.
  7. Meanwhile, combine olive oil, shallot, garlic, oregano, basil, parsley, crushed red pepper, thyme, and ground pepper in a food processor.
  8. Process until smooth, stopping to scrape down the sides of the bowl, about 1 minute.
  9. Turn the dough out onto a lightly floured surface and divide it in half.
  10. Pat each half into a round and let stand for 10 minutes.
  11. Preheat oven to 475 F (246°C).
  12. Roll each round on a lightly floured surface into a 1/8-inch thick circle.
  13. Transfer the rolled dough to a cake rack or any flat perforated pan.
  14. Spread the garlic-herb sauce evenly over each pizza.
  15. Sprinkle with grated cheese.
  16. Bake on the rack until the edges of the pizzas are lightly browned, about 10 minutes.
  17. Serve pizzas immediately.
