  • 1 c Apples; Finely Chopped (for Crunch Muffins)
  • 1/2 c Sugar; Granulated
  • 2/3 c Cheddar; Sharp Coarse Grate (for Cheddar Muffins)
  • 2 Eggs; Lg
  • 1/2 c Pecans; Chopped
  • 1 1/2 c Unbleached Flour
  • 3/4 c Milk
  • 1 ts Baking Soda
  • 1 ts Baking Powder
  • 1/2 ts Salt
  • 3/4 c Oats; Quick Cooking
  • 12-15 thin slices of unpeeled red apple
  • 2 tbsp Butter; Melted
  • 2 tbsp Cinnamon-Sugar Mixture
  • 1/4 c Vegetable Shortening (for Cheddar Muffins)
  • 1/2 c Sugar (for Cheddar Muffins)
  • 1 Large Egg, Slightly Beaten (for Cheddar Muffins)
  • 2 ts Baking Powder (for Cheddar Muffins)
  • 1/2 c Milk (for Cheddar Muffins)
  • 1/2 ts Salt (for Cheddar Muffins)
  • 1 c Tart Apples; finely chopped (for Cheddar Muffins)
  • 1 1/2 ts Ground Cinnamon (for Cheddar Muffins)
  • 1/4 c brown sugar (packed) (Nut Crunch Topping)
  • 1/4 c chopped pecans (Nut Crunch Topping)
  • 1/2 t ground cinnamon (Nut Crunch Topping)

    Preheat the oven to 400 degrees F for Apple Crunch Muffins and 375 degrees F for Apple Cheddar Muffins.

    For Apple Crunch Muffins: Cream the shortening and sugar together in a large bowl. Beat in eggs one at a time, mixing well after each addition.

    In a separate bowl, sift together the flour, baking powder, baking soda, and salt.

    Gradually stir the flour mixture into the shortening mixture. Add oats, cheddar (if making savory version, otherwise omit), and pecans, mixing well after each addition.

    Spoon batter into paper-lined 2 1/2-inch muffin-pan cups, filling 2/3rds full.

    For Nut Crunch Topping: Mix together brown sugar, chopped pecans, and cinnamon in a small bowl.
