  • 2 eggs (separated)
  • 1/2 cup sugar
  • 2 1/4 cups sifted cake flour
  • 1 cup sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • 1/3 cup salad oil
  • 1 cup milk (divided)
  • 1 1/2 tsp vanilla
  • 1/3 cup sugar
  • 3 Tbsp flour
  • 1/4 tsp salt
  • 1 1/4 cups milk
  • 1 beaten egg
  • 1 Tbsp butter
  • 1 tsp vanilla
  • 1 1/2 1-ounce squares unsweetened chocolate
  • 2 Tbsp butter
  • 1 1/2 cups sifted powdered sugar
  • 1 tsp vanilla
  • 3 Tbsp boiling water
  • 2-3 tsp water

    Preheat oven to 350°F (175°C). Grease and lightly flour two 9-inch cake pans.

    In a large bowl, beat egg whites until soft peaks form. Gradually add 1/2 cup sugar, beating until very stiff peaks form. Set aside.

    In another bowl, sift together 2 1/4 cups cake flour, 1 cup sugar, 3 tsp baking powder, and 1 tsp salt.

    Add salad oil, 1/2 cup milk, and 1 1/2 tsp vanilla to the dry ingredients. Beat 1 minute at medium speed.

    Add remaining milk and egg yolks. Beat for 1 minute and scrape down the sides of the bowl.

    Gently fold the egg white mixture into the batter in three additions, being careful not to deflate the whites.

    Divide batter evenly between prepared pans. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

    Cool in pans for 10 minutes, then remove from pans and cool completely on wire racks.

    For the cream filling: In a saucepan, combine 1/3 cup sugar, 3 Tbsp flour, and 1/4 tsp salt. Gradually whisk in 1 1/4 cups milk.

    Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for 2 more minutes.

    Remove a small amount of the hot mixture and whisk it into the beaten egg to temper it. Then pour the egg mixture back into the saucepan.

    Return to heat and cook, stirring constantly, until the mixture boils again. Stir in 1 Tbsp butter and 1 tsp vanilla. Cover with plastic wrap directly touching the surface and cool completely.

    For the chocolate glaze: Melt 1 1/2 squares unsweetened chocolate and 2 Tbsp butter over low heat, stirring constantly. Remove from heat.

    Stir in 1 1/2 cups powdered sugar and 1 tsp vanilla until crumbly. Blend in 3 Tbsp boiling water, then add additional water 1 tsp at a time to achieve a pouring consistency.

    Place one cake layer on a serving plate. Spread with half of the cooled cream filling. Top with second cake layer.

    Pour chocolate glaze over the top of the cake, spreading evenly to cover the top and sides. Refrigerate until glaze is set before serving.
Note

For best results, ensure the cream filling is completely cool before assembling the cake to prevent the cake from becoming soggy.

The chocolate glaze should be poured quickly while still warm enough to spread, but not so hot that it melts the cake layers.

Store leftovers in the refrigerator, covered, for up to 3 days. Bring to room temperature for 30 minutes before serving for optimal texture.

You can substitute heavy cream for part of the milk in the filling for a richer flavor.
