Ingredients
3cups vegetable stock or water
1tablespoon Bragg's Aminos or soy sauce (if using water)
2cups bulgur wheat
1head celery, sliced
1large onion, sliced
Directions
1
In a large pot, bring the vegetable stock (or water with soy sauce) to a boil.
2
Add the sliced celery and onion to the boiling liquid. Reduce heat and simmer for 5 minutes to infuse the broth with vegetable flavor.
3
Add the bulgur wheat to the pot. Stir gently to ensure it is submerged.
4
Bring the mixture back to a boil, then immediately cover the pot with a tight-fitting lid.
5
Reduce heat to low and simmer for 25 minutes.
6
Remove the pot from the heat. Let it stand, covered, for at least 5 more minutes to allow the bulgur to finish steaming and absorb remaining liquid.
7
Fluff with a fork before serving.
Note
This pilaf serves as an excellent alternative to rice. For a heartier meal, add mushrooms, peas, or green beans during the simmering step.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
