For Pistachio Pesto: Combine basil, garlic, cheese, and pistachios in a food processor. Process to mix. With machine running, slowly add olive oil. Season to taste with salt and pepper and process to desired consistency.
2 For Walnut Pesto: Combine basil, walnuts, garlic, salt, and pepper in a food processor fitted with a steel blade. Chop until basil and nuts are in small pieces. With processor running, add olive oil in a thin stream until you have a fine, green soup. Stir in Parmesan cheese and process just to blend.
3 For Macadamia Pesto: Blend 1/4 cup olive oil, basil, and garlic in a blender. Add macadamia nuts and Parmesan cheese; blend well. Gradually mix in the remaining 1/2 cup oil. Season with salt and white pepper. Let stand for 5 minutes before serving.
Note
Use about 1/4 cup pesto for every 2 cups of cooked pasta.
To serve, toss pesto at room temperature with hot cooked fettuccine.
Do not over-process the mixture; tiny pieces of basil should remain visible for texture.
Store in an airtight container in the refrigerator for up to 1 week. For longer storage, freeze in ice cube trays.
