Ingredients
- 3.5 lbs crabapples (washed, stems and blossom ends removed, cut into small pieces, do not peel or core)
- 3 cups water
- 4 cups crabapple juice (extracted from cooked apples)
- 4 cups granulated sugar
- 1 pouch Certo liquid pectin
- 0.5 tsp butter or margarine (to reduce foaming)
Directions
- 1 Prepare the apples: Wash the crabapples, remove stems and blossom ends, and cut into small pieces. Do not peel or core them.

Extract the juice: Place the apple pieces and 3 cups of water in a large saucepan. Bring to a boil, then cover and simmer for 20 to 25 minutes until the apples are soft.- 3
Strain the mixture: Pour the cooked apples and liquid through a jelly bag or fine-mesh strainer lined with cheesecloth to extract the juice. Discard the solids. You should have approximately 4 cups of juice. If you have less, add water; if more, boil down to 4 cups.- 4
Prepare for boiling: Measure the 4 cups of juice into a 6- or 8-quart pot. Measure the 4 cups of sugar into a separate bowl to avoid clumping.- 5
Combine ingredients: Stir the sugar into the hot juice until dissolved. Add the 1/2 teaspoon of butter or margarine to help reduce foaming.- 6
Boil: Bring the mixture to a full rolling boil over high heat, stirring constantly.- 7
Add pectin: Stir in the pouch of Certo liquid pectin. Return to a full rolling boil, stirring constantly.- 8
Final boil: Boil hard for exactly 1 minute, stirring constantly. Remove from heat.- 9
Skim and fill: Skim off any foam from the surface. Ladle the hot jelly into hot, sterilized jars, leaving 1/4 inch head space.- 10
Seal: Adjust lids and bands. Process the jars in a boiling water bath for 5 minutes.- 11
