Ingredients
- 1 baked pastry shell (9-inch)
- 1/4 sugar
- 1 envelope unflavored gelatin
- 1.5 dairy eggnog
- 2 slightly beaten egg yolks
- 1/4 rum
- 2 egg whites
- 2 sugar
- 3/4 whipping cream
Directions
- 1 In a medium saucepan, combine 1/4 cup sugar and gelatin. Add eggnog and egg yolks. Cook over medium heat, stirring constantly, until sugar and gelatin dissolve and the mixture thickens slightly and bubbles. Remove from heat.

Cool the mixture for 10 minutes. Stir in rum. Chill in the refrigerator, stirring occasionally, until the mixture reaches the consistency of thick corn syrup (partially set). This may take 15-20 minutes.- 3
Meanwhile, in a large mixer bowl, beat egg whites until soft peaks form (tips curl). Gradually add the remaining 2 tablespoons sugar, beating until stiff peaks form (tips stand straight).- 4
Beat whipping cream until soft peaks form.- 5
Gently fold the whipped cream into the partially set eggnog mixture. Then, carefully fold in the beaten egg whites to lighten the mixture.- 6
Chill the mixture until it mounds when spooned. Pile the filling into the baked pastry shell. Chill for several hours or until completely set.- 7
For Caramel Filigree: In a heavy 1-quart saucepan, heat 1/2 cup sugar over medium-low heat without stirring. When sugar begins to melt, stir constantly until mixture is almost a medium caramel color. Remove from heat and stir in a few drops of hot water.- 8
Let the caramel stand for 1 minute. Using a spoon, quickly drizzle the caramelized sugar over the top of the pie to create a web-like pattern. Serve immediately.NoteFor the caramel filigree, work quickly as the caramel hardens rapidly. If it hardens before drizzling, reheat gently.
Rum can be substituted with dark rum for a deeper flavor, or omitted for a non-alcoholic version.
Store covered in the refrigerator. The pie is best served within 2 days.
