Note
Use a non-aluminum saucepan to prevent any metallic reaction with the acidic wine and lemon juice.
For best flavor, choose firm, ripe figs that are not overly soft, as they will hold their shape better during poaching.
The figs can be poached and stored in the syrup in the refrigerator for up to 2 days. The flavors meld and deepen with time.
Substitute crème fraîche for a tangier contrast to the sweet syrup, or use vanilla ice cream for a richer texture.
