Starter Maintenance: If you do not plan to bake immediately, store the starter in the refrigerator. Refresh it weekly by feeding it with equal parts flour and water.
Liquid Choice: Traditional Finnish rye often uses water, but flat beer or buttermilk can add subtle flavor variations. Potato water is also a traditional option.
