Note
For a vegetarian version, omit the bacon and use vegetable broth instead of chicken broth. You can also add a bit more oil or use bacon fat substitute for richness.
If you don't have time to soak the beans overnight, you can use the quick-soak method: cover beans with boiling water, let stand for 1 hour, then drain and rinse.
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. They can also be frozen for up to 3 months.
