Combine 1 cup of dried cherries with 2 cups of white wine vinegar in a glass container. Cover and allow to steep for 2 days at room temperature. Heat the mixture just to a boiling point, then strain through cheesecloth to remove the cherries. Cool completely and store in a tightly sealed container. This keeps for several weeks in the refrigerator.
If you do not have dried cherry vinegar, you can use regular balsamic vinegar or apple cider vinegar with a teaspoon of cherry jam stirred in. You can substitute the Belgian endive with frisée or radicchio for a different bitter crunch.
Store the homemade vinegar in the fridge. Assemble the salad just before serving to prevent the greens from wilting and the fruit from oxidizing.
