Ingredients

15 butter or margarine
1 onion, chopped
1 garlic, crushed
15 curry powder
5 turmeric powder
30 lemon juice
350 minced meat (lamb or beef)
1 white bread (soaked in a little milk)
30 apricot jam or fruit chutney
60 seedless raisins
1 cooking apple (peeled and grated)
1 banana, mashed
50 red wine or stock cube dissolved in water
salt to taste
3 gravy browning
2 bay leaves
1 egg
125 milk (fresh milk added to the excess milk drained from bread)

Directions

Place butter or margarine in a shallow glass dish and microwave on full power (100%) for 30 seconds until melted.

Add onion and garlic to the melted butter. Microwave on full power for 3 minutes until softened.

Mix curry powder, turmeric, and lemon juice together, then add to the onion mixture. Blend well.

Add the minced meat to the dish. Mix well with a fork to break up the meat.

Cover the dish and microwave on full power for 3-4 minutes, stirring once or twice with a fork to break up any lumps.

Drain the milk from the soaked bread and set it aside for the topping. Mash the soaked bread with a fork and add it to the meat mixture.

Add apricot jam (or chutney), raisins, grated apple, mashed banana, red wine (or stock), salt, and gravy browning. Mix everything well.

Cover the dish and microwave on medium-high power (70%) for 5 minutes, stirring once halfway through.

Lightly grease the glass dish if necessary. Transfer the meat mixture into the dish, smoothing the top and raising it slightly in the center so that the topping settles around the edges.

Arrange the bay leaves on top of the meat mixture.

Beat the egg and milk together. Pour this topping over the meat mixture.

Microwave the bobotie, uncovered, on medium power (50%) for 10 minutes or until the topping has set.

For a browned topping, place the dish in a preheated oven at 180°C for 10 minutes before serving.

Note

Bobotie can be frozen at this stage, provided it has cooled down completely beforehand.

If you do not have a microwave, this recipe can be adapted for stovetop cooking of the meat mixture, followed by baking in the oven.

Ensure the milk used for the topping includes the milk drained from the soaked bread to maintain the correct consistency.
