Storage: Keep this vinaigrette in an airtight container in the refrigerator for up to 3 days. The heavy cream may separate slightly upon cooling; simply whisk again before serving.
Variations: For a lighter version, substitute the heavy cream with whole milk or Greek yogurt, though the emulsion may be less stable. You can also add a teaspoon of honey or maple syrup for a hint of sweetness.
Tip: Boiling the garlic mellows its flavor significantly. If you prefer a stronger garlic punch, roast the cloves instead or use raw garlic, but note that the texture will be different.
