Note
This recipe is a modification of the traditional Chinese "Beggar's Chicken," which uses actual mud or lotus leaves to encase the bird before cooking in coals. Here, the flour and oil mixture creates a similar sealing effect.
For easier handling and more even cooking, consider using a vertical roaster stand. Place the bottom oven rack as low as possible to accommodate the height of the vertical chicken.
If using cut-up chicken pieces instead of a whole bird, coat each piece thoroughly and roast for a shorter duration, typically 45-60 minutes, until the coating is brown and the meat is cooked through.
A lower heat setting with a longer roast time can yield even more tender results, allowing the flavors to penetrate deeply without burning the exterior crust.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The crust may soften upon reheating; for best results, reheat in an oven or toaster oven to restore crispiness.
