Avocados oxidize quickly when exposed to air. To maintain the vibrant green color, cover the surface of the sauce directly with plastic wrap or a layer of cling film before storing in the refrigerator. Use within 24 hours for best quality.
If you prefer a smoother consistency, you can mash the avocado slightly before mixing, but leaving it chunky provides a better texture contrast with the mustard seeds.
For a milder heat, remove the white membrane from the inside of the red chilli before chopping, as this contains most of the capsaicin.
