Note
If using salted herring, ensure they are soaked in cold water for 12 hours prior to preparation to reduce excess saltiness, unless using canned matjes herring which requires no soaking.
Fresh horseradish root should be scraped and thinly sliced. If using prepared horseradish, drain and squeeze it dry in a kitchen towel to prevent the pickling liquid from becoming too cloudy or spicy.
Ginger root is optional but adds a nice warmth; if using, slice it thinly and include it in the vegetable layers.
This dish tastes best after the flavors have had time to meld in the refrigerator for at least 48 hours. Store in the refrigerator for up to 2 weeks.
