Note
To scald the cream and milk mixture, bring it just to the boiling point. You will see small bubbles forming around the edges of the pan. Do not let it come to a rolling boil, as this can cause the milk to scorch or the cream to separate.
Storage: This sauce is best served fresh. However, the base (without the whipped cream) can be stored in an airtight container in the refrigerator for up to 2 days. Whip fresh cream and fold it in just before serving for the best texture.
Substitutions: If you do not have Grand Marnier, you can substitute with Cointreau, triple sec, or a mixture of orange juice and a splash of orange liqueur for a similar citrus profile, though the flavor will be less complex.
Tip: If the sauce accidentally curdles while cooking, remove it from heat immediately and blend with an immersion blender or transfer to a standard blender to smooth it out. Adding a spoonful of cold cream can also help rescue a broken sauce.
