Storage: This high-acid fruit curd will keep for at least two weeks in the refrigerator.
Serving Suggestions: Use this curd to fill small tartlets or a 9-inch pre-baked tart shell. Garnish with rosettes of crème Chantilly, leaving a small spot in the center uncovered to show the curd. It also makes a delicious filling for layer cakes.
Crème Chantilly Tip: Whip cold fresh cream until it mounds softly and just barely holds its shape. The volume will approximately double. Ensure there is no hint of graininess, which indicates the cream is overbeaten and turning to butter. Stir in vanilla and sugar to taste.
Variations: You may flavor the whipped cream with spirits, liqueurs, wine, fruit purees, jams, or the reduced liquid from poached fruit for added complexity.
