Note
Storage: This curd will keep for at least two weeks in the refrigerator. Ensure the container is airtight.
Serving Suggestions: Use this curd to fill small tartlets or a 9-inch pre-baked tart shell. Garnish with rosettes of crème Chantilly, leaving a small spot uncovered in the center so the curd shows through. It also makes a delicious filling for layer cakes.
Crème Chantilly Tip: Whip cold fresh cream until it mounds softly and just barely holds its shape. The volume will approximately double. Be careful not to overbeat, as the first sign of graininess indicates it is turning to butter. Stir in vanilla and sugar to taste. You may also flavor the cream with spirits, liqueurs, wine, fruit purees, jams, or the reduced liquid from poached fruit.
