Note
Add 9 oz of cheese tortellini or spinach tortellini to the pot during the last 7-10 minutes of simmering to cook the pasta until tender. Do not overcook as tortellini can become mushy.
For extra freshness, stir in 1 tablespoon of chopped fresh basil just before serving. You can also add 1/2 lb of shredded cabbage for additional texture and nutrition.
If using pre-cooked or smoked sausage, you can reduce the simmering time slightly. Taste the broth before final seasoning as sausage can vary in saltiness.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Note that the tortellini may absorb some broth and become softer upon reheating; add a splash of water or broth when reheating to adjust consistency.
