Note
For a richer flavor, you can substitute part of the water with additional beef broth.
If you prefer a thicker soup, mash some of the cabbage against the side of the pot during simmering.
This soup tastes even better the next day as the flavors meld together. Store leftovers in an airtight container in the refrigerator for up to 3 days.
You can use sauerkraut instead of fresh cabbage for a tangier, traditional variation, but rinse it well first and reduce the salt accordingly.
