Note
Use fresh, firm trout for best results. If the fish is frozen, thaw completely in the refrigerator overnight and pat very dry before cooking.
For a richer flavor, fry the oatmeal in a small amount of butter instead of toasting it dry.
Brown butter (beurre noisette) can burn quickly, so watch it closely once it starts foaming and turning golden. Remove from heat immediately if it starts to smell acrid.
If you prefer a milder dish, reduce the amount of pepper used on the skin.
Serve with steamed asparagus, green beans, or roasted new potatoes to complement the rich flavors.
Leftover brown butter sauce can be stored in the refrigerator for up to 3 days and reheated gently. However, the trout is best enjoyed fresh.
