Fermentation time varies based on temperature. In warm weather, it may take only 1 to 2 days; in cooler weather, allow 3 to 4 days.
Store the finished kimchi in the refrigerator, covered, for up to 2 weeks. It will continue to ferment slowly and become sourer over time.
If you cannot find Korean red pepper flakes (gochugaru), you can substitute with a mix of cayenne pepper and paprika, though the flavor will be less authentic.
Ensure all utensils and jars are clean to prevent unwanted bacteria from contaminating the ferment.
