Place coriander seeds, cumin seeds, peeled black and green cardamom pods, cloves, broken cinnamon sticks, and black peppercorns into a spice grinder, coffee grinder, or food processor.
2 Pulse or grind the spices until they are finely ground but still retain a slightly coarse texture, avoiding a fine powder consistency.
3 Transfer the ground spice mixture to a bowl and stir in the freshly ground nutmeg until evenly distributed.

Note
Storage: Store the finished Kopan Masala in an airtight glass jar in a cool, dark place. It will keep its potency for up to 3-6 months.
Tip: For the best flavor, ensure your whole spices are fresh. If using pre-peeled cardamom seeds, skip the peeling step. If using whole pods, remove the seeds from the pods before grinding.
Variation: You can toast the whole spices in a dry skillet over medium heat for 2-3 minutes until fragrant before grinding. This enhances the aroma and depth of flavor.
