Note
Storage: Keep in an airtight container in a cool, dark place for up to 3-4 months for best flavor. For longer storage, keep in the refrigerator or freezer.
Heat Level: This recipe is quite hot due to the high proportion of red chile and cayenne. Reduce the cayenne to 1 teaspoon for a milder version.
Ingredient Note: If using fresh ginger, peel and finely grate it before adding. If using dried ginger root, ensure it is fresh. Cardamom can be green pods (seeds only) or whole seeds; green pods are traditional for Madras blends.
Usage: Use as a substitute for store-bought curry powder in any recipe. Excellent in lentil dals, chickpea curries, or as a marinade for chicken or tofu.
