Note
For the Whiskey Buttered Applesauce: Combine 4 ounces Vermont hard apple cider, 2 cinnamon sticks, 6 allspice berries, and 2 cloves in a pan and reduce by half. Saut 1/2 ounce shallots in 1 ounce clarified butter until caramelized. Add 1 ounce maple syrup and cook 1 minute. Deglaze with 2 ounces Jack Daniel's whiskey and reduce. Add 2 ounces cider reduction, 1 ounce pork pan drippings, and remaining whiskey. Simmer to reduce slightly. Whisk in 2 1/2 ounces sweet cream butter until emulsified. Finish with 1/8 teaspoon grated nutmeg and chopped sage.
Ensure pork chops reach an internal temperature of 145F (63C) for safe consumption.
For a non-alcoholic version, substitute the whiskey with additional apple cider or juice.
