Use a metal or glass bowl for beating egg whites; plastic bowls can retain oils that prevent whites from whipping properly.
Ensure your candy thermometer is accurate for the nougat stage. If you don't have one, test by dropping a small amount of syrup into cold water; it should form a soft ball that flattens when removed.
