Note
This starter originates from Julia Child's "Master Chef" book, credited to Nancy Silverton.
The entire process takes approximately 10 days to complete, but the starter is sustainable for life with proper care.
Storage: Keep the starter tightly covered in the refrigerator. Every 4 to 6 months, pour off all but 2 cups and give it a fresh feeding to maintain health.
Variations: While this recipe uses red grapes, other fruits with natural yeast on their skins can sometimes be used, though results may vary.
Tip: The starter is considered "living but weak" after the initial 6-day fermentation. The subsequent feeding schedule is crucial for developing a strong, reliable leaven.
