Ingredients
1 3/4 lb. octopus (thawed)
4 tbs. olive oil
2 large onions sliced
salt and pepper
1 bay leaf
1/4 cup dry white wine
Directions
1
Remove the head section from the octopus. Clean thoroughly and wash the arms.
2
Slice the octopus into bite-sized chunks.
3
Heat olive oil in a large skillet over medium heat. Add the octopus chunks and cook for about 10 minutes, turning regularly until browned.
4
Add the sliced onions, salt, pepper, bay leaf, and white wine to the skillet.
5
Cover the skillet and simmer gently until the octopus is tender, about 15 minutes.
Note
Ensure the octopus is fully thawed if frozen before cooking.
For extra tenderness, you can parboil the octopus for 10 minutes before slicing and sautéing.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
